Aroma and character
Kweichow Moutai is a jiangxiang, or sauce-aroma, baijiu. The style is known for a pronounced fermented aroma and a matured character.
At 53%vol it is poured at room temperature rather than chilled, a little at a time into a small glass. The finish is long, so it suits a toast or a glass after the meal, and banquet and gift occasions, rather than steady drinking alongside the food.
